You should naturally be proud of being a grand daughter of a vedic pandit. What I feel is that the ancient knowledge may be [or some times may not be ] further improved. If you have aditya hridayam please translate it and share the knowledge with others to see if an improvements are possible.

A good one. "Arogyam Bhaskaradhichet" - We should wish for health from Sun God. And I personally find it very powerful. My grand father is a vedis pundit. He had a book that printed in the beginning of 19th century on Aditya Hrudayam, its meaning, origin and references. He explained me the stotra and gave me that book.  That is one of my pride, antique posessions. 

(Psychologically may be) reading aditya hrydayam makes me feel better

Yes , as you mentioned sun worship was at the centre of several ancient cultures.

As regards Agnihotra, it is an ancient practice from the Vedic times. It was considered one of the five daily rituals (pancamahayajna) of a householder. It is also called  devayajna, havana or homa. It is also an integral part of Zoroastrian religion (Yasna Hapta?haiti).

 Rig Veda was prior to Zarathustra.

Why at Sunrise and Sunset?. I think it might be because  the transitions either during a day or a season (parva) are for some reason considered highly significant. Sandhya a transition from 'darkness' to 'light'   at sunrise  and  again  at sun set is also a 'Sandhya'   are considered times when nature is at its benevolent best  when peace , tranquility and a sense of wellbeing fills the air. It is also considered  most appropriate for spiritual practices. For similar reasons Sandhya vandanam is also performed  at the transition hours.

Someone said to me , it has also to do with 'Circadian Rhythm' in a cycle of a day . But , I do not know much about that.

I understand that Agnihotra is also a healing process . Please check  the following site .(To me it looks rather complicated and I cannot make much of  what is said there.)

surya namaskara,
is prescribes as a cure for all eye diseases.
Gayatri is also about the Sun and his consort savitha...
Agni is a vedic god. The planets came later...
Agni,Prajapati, Rudra are the most ancient.
Agni is seen as the vehicle of foods for the gods..
Agni purana is an interesting text..
The basic dulaity principle of Yin and the Yang 
of oriental philosophy is derived from 
Sun and the moon.
In astrology Sun is a malefic planet...

Yes Raj, I realise that ancient science is about Nature. As those concepts were not put to open discussion they became dogmatic in the eyes of modern science.
